Pumpkin Scones

Hello!

I was just thinking about what to write for my first proper blog post and I came across the idea that I could do a recipe. A little further down the road I thought about scones, and how my mum makes really yummy scones, but adds roast pumpkin to make them that little bit healthier. So for my first proper blog post, I am going to teach you how to make pumpkin scones.

Ingredients: 600 grams of kent pumpkin, seeded, peeled and chopped.

3 cups of self raising flour

Butter at room temperature for greasing

1 Pinch of salt

60 grams of chilled butter chopped into small pieces

1 cup of buttermilk

Method:

Step One: Cook pumpkin in a saucepan of boiling water for ten minutes or until very tender. Next, wait for them to cool and then use a potato masher to form a coarse puree.

Step Two: Preheat oven to 240 degrees celcius and grease a baking tray with butter. Then, combine the flour and salt in a large bowl. Now you take your chopped butter and mix it into the flour and salt mix until you have what looks like fine breadcrumbs. And finally, add the pumpkin and buttermilk, and knead until you have a thick dough.

Step Three: Turn your dough onto a floured surface and start to make small, ball shapes and place them onto the prepared tray. They should be about one cm apart on the tray so that they don't bake into eachother.

Step 4: The last thing that you have to do is pop them into th oven for 12 minutes or until they are golden brown. Wait for them to cool and then serve them up with some whipped cream or jam.
